Canada’s Nanaimo Bar Recipe

The 4th of July is this weekend. I always love spending the day with family and friends around a grill and a smorgasbord of delicious side dishes and desserts as we watch fireworks into the night. Did you know that Canada has a similar holiday called… get this… Canada Day? Original eh? So why not celebrate both holidays this week and make a pan of these delicious no-bake Canada’s Nanaimo Bar Recipe.

Almost four years ago now, my family vacationed in Alberta, Canada. It was a trip of a lifetime. Full of beautiful scenery, friendly people, and of course some iconic food.

Ever heard of poutine?

I’ll give you a hint… it is french fries, topped with cheese curds, and a heavy helping of gravy dribbled over everything.

I tell ya… Canada is doing it right!

And these no-bake bars, which are famous in Canada, is something right.

So deliciously right.

The crumb (or bottom) layer is made from melting butter and then mixing in cocoa powder, sugar, and an egg.

Once the concoction has thickened, stir in graham cracker crumbs, shredded coconut, and some finely chopped walnut pieces.

Pour into a prepared 8 by 8 inch baking pan, before making the vanilla buttercream layer.

Which, of course, includes some more butter, a splash of heavy cream, a couple tablespoons of instant vanilla pudding mix, and powdered sugar.

Spread it on top of the crumb bottom and then top with the ganache made from melted semi-sweet chocolate and (you guessed it) more butter.

Hey I never said that this dessert was low in calories.

I did say it was delicious and worth a little splurge over the summer holiday season.

Canada’s Nanaimo Bar Recipe

The best no-bake dessert idea is this family favorite; Canada's Nanaimo Bar Recipe. Perfect for Canada Day or July 4th celebrations.

Prep Time 15 minutes
Cook Time 15 minutes
Cool Time 1 hour
Total Time 1 hour 30 minutes
Servings 24

Ingredients

Bottom-Crumb Layer

  • 1 stick Butter
  • 5 Tbsp Unsweetened Cocoa Powder
  • 1/4 cup Sugar
  • 1 Egg, beaten
  • 1 3/4 cup Graham Cracker Crumbs
  • 3/4 cup Sweetened Shredded Coconut
  • 1/2 cup Walnuts, finely chopped (can also use almonds)

Middle- Buttercream Layer

  • 1 stick Butter, softened
  • 3 Tbsp Heavy Cream
  • 2 Tbsp Instant Vanilla Pudding Mix
  • 1 1/2 cups Powdered Sugar

Top- Chocolate Ganache Layer

  • 4 oz Semi-sweet Chocolate Chips
  • 2 Tbsp Butter

Instructions

  1. Line an 8-inch square baking dish with parchment paper.

Bottom-Crumb Layer

  1. Combine the butter, cocoa powder, and sugar in a heatproof bowl set over a saucepan of simmering water.

  2. Heat, stirring, until melted.

  3. Stir in egg and cook until the sauce starts to thicken. About 1-2 minutes.

  4. Remove the bowl from the pan and stir in the graham cracker crumbs, coconut, and chopped walnuts.

  5. Press into the bottom of the prepared pan.

Middle- Buttercream Layer

  1. Beat together the softened butter, heavy cream, and pudding mix with a mixer on medium-high speed until combined.

  2. Gradually beat in the powdered sugar, until light and fluffy.

  3. Spread buttercream over the bottom layer in the pan.

Top- Chocolate Ganache Layer

  1. Melt the chocolate chips and butter in a heatproof bowl over a pan of simmering water, stirring continuously.

  2. Let cool 2 minutes, then pour over the middle layer.

  3. Cover and refrigerate until set, about 1 hour.

  4. Cut into bars.

I struggled for years getting the eggs to peel easily.... until finally the stars aligned with these instructions. It’s not anything too difficult or crazy. Simple and straightforward. With the shell coming off in almost one piece and the yolks are perfect every time! 👌🏻

I’m incredibly blessed that in my job I have the I’m incredibly blessed that in my job I have the opportunity to meet and get to know many different groups of people from every walk of life, but occasionally… there are certain ones who find a special place in your heart.

A gentleman I’ve been working with sent met copies of this in the mail yesterday and to say I (ugly) cried is probably an understatement. 

I’m not one to push politics (especially on social media) but all I want to say is this is why history matters. Your not going to find this sort of thing written in text books… but it is in the hearts and minds of a generation quickly fading away.

What is happening in the world is not just “news”. These are people’s lives. See the pain and affect this sort of war still has on a generation 75 plus years later. 

Context:
Picture 1- Poem written by my clients grandfather sometime after his son (client’s father) was KIA in WWII. The line that got me was… “It is just a sweet memory that chants the refrain… I’m glad I touched shoulders with you.” 😭 I think if you have ever lost someone dear to you… you can understand that line ❤️

Picture 2-3- Note from client to me on a copy of his dad’s obituary. I think it’s easy to sense how this sort of loss had an affect on multiple generations of a family.

It’s no secret I love to travel… and one of my It’s no secret I love to travel… and one of my favorite ways to experience new cultures is through the food.

Put on a spritz of your favorite perfume, not because you are going out, but because it makes you feel special.

Open the expensive bottle of wine that you’ve been saving for the ‘perfect’ occasion, and drink it for no particular reason at all. 

Stop saying “we need to get together” to a dear friend and then never actually making plans.
Leave your sweatpants on, messy bun in, and just BE with each other. Curl up on the couch with their dogs, kids, etc and enjoy some leftover Chinese food while catching up on your favorite shows.

Life is messy and real. 
Stop living FOR the perfect and just LIVE.
Don’t wait.
Make the memories WITHIN the mess. 

That’s the mindset I’m trying to live in these days, and you know what? 

I’m happier for it! ❤️
