Cheesy Hash Brown Potatoes Casserole
Every year our Christmas Eve meal is pretty set in stone. It is made up of our family’s favorite recipes. Grilled filet mignon, corn froze from our summer garden, as well as a cake to celebrate Jesus birth. And,of course, this Cheesy Hash Brown Potatoes Casserole.

This recipe isn’t anything new. It has been around and graced many a table for special occasions.
But holidays and special occasions are based around comfort foods.
This is comfort food to the max.

The best thing about this recipe is it is super easy!
Mix everything together and then bake.
Simple as that!

This recipe is also a great kick off to a theme I plan to bring to the blog for the month of January.
Double Dinners
In this case… Double Side Dishes.
Double Dinners is a concept of making one big dish. Freezing half of the meal to be used at a later (more hectic) time and baking the other for dinner tonight.
In essence making double dinners. One for now. One for later!

Make your Christmas (or Easter, Birthday, or etc) extra merry this year by throwing together this simple recipe.
Just mix together your favorite frozen hash browns with butter, cheese, and a few other odds and ends.
Your guests (and yourself) will thank you!


Cheesy Hash Brown Potatoes Casserole
Ingredients
- 1 pkg (32 oz) Frozen Shredded Hash Browns, thawed
- 2 cups Shredded Cheddar Cheese
- 2 cups Sour Cream
- 1 can (10 1/4 oz) Cream of Chicken Soup
- 1/2 cup Butter, melted
- 1/2 cup Chopped Onion
- 1 tsp Salt
- 1/4 tsp Pepper
Instructions

In a very large bowl, combine all of the ingredients listed.

Pour hash brown mixture into a greased 11 x 14 inch baking dish.

Bake at 350°F for 45 minutes or until golden brown.
Recipe Notes
This can be baked in a 9×13 inch pan, just increase the baking time a little.
Freezer Friendly! Split the recipe between two 8×8 inch baking pans. Make one and freeze the other.
