Chili Cheese Frito Corn Salad
Sometimes I wonder why certain recipes are called salads. Especially recipes like this Chili Cheese Frito Corn Salad.

Normally the word “salad” means something healthy, green, and you know… healthy?
Which this recipe most likely is not.

Since the main ingredients are canned corn, chips, and mayonnaise.
Yeah… I really have no idea why this recipe is called a salad.

Stick with me a minute here. It may not be a salad, but this side dish is still something special!
Whenever I take it to a potluck, I usually also bring along a few recipe cards with the ingredient list and instructions, because it never fails, this one is a hit that everyone wants the recipe for!

It is the perfect addition for any summer bbq.
To a bowl; stir together canned corn, shredded cheddar cheese, mayonnaise, with chopped green pepper and onion. Top with some crushed up chips and watch the people flock to it.
Chili Cheese Fritos are the “flavor” of choice. Adding it to the salad is just what it needs to get the perfect seasoning and crunch.

Serve with your favorite grilled burgers, pork, or chicken.
Whatever you choose for the main will soon become secondary to this delicious side!


Chili Cheese Frito Corn Salad

Ingredients
- 1 can (15 oz) Whole Kernel Corn, drained
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Mayonnaise
- 1/2 cup Chopped Green Pepper
- 1/4 cup Chopped Onion
- 1/2 bag (10.5 oz) Chili Cheese Fritos
Instructions

In a bowl combine; corn, cheese, mayonnaise, green pepper, and onion.

Chill for at least 2 hours or overnight.

Right before serving, crush chips and stir into "salad".
Recipe Notes
- You can easily double recipe
- The chips get a bit soggy if left in the salad too long. If you don’t believe that the whole salad will be used in one sitting, have people add the chips to their individual serving.
I love this salad. I took it to an Easter dinner one year that was potluck. My recipe included black beans. The hardest part of the recipe is thoroughly draining the canned items. You don’t want it too juicy. It is so good, I hoped nobody would like it too much so I could take it back home. Really!
Isn’t it good!? The black beans sound like a wonderful addition!
I actually mix the veggies in a bowl and at serving time, I mix 1/2 mayo and 1/2 sour cream, add cheese and Fritos. I eat on this for a couple of days and I do t like wet cheese. I find the mayo and sour cream mixture is much lighter. Not sure why this is mainly a summer recipe around here!
