Grilled Jalapeno Poppers With Bacon
Have I mentioned that football season is back? And since Mother Nature decided that she needed to give me and my fellow Husker fans two opening weekends, why not prolong the football hype and give you another tailgate favorite of mine, Grilled Jalapeno Poppers With Bacon.
What I love about these poppers is that they are the perfect food for a party, since they can be prepped in advance.
I have yet to meet a hostess with the most-ess, who enjoys rushing and finishing all the dishes they plan to serve right before the party.
Cut the jalapenos, fill with cheese, and wrap in bacon. At that point stick them onto a baking sheet and place in the fridge for up to a day or so in advance. When ready for the party remove from the fridge and grill or bake in the oven.
Don’t think you can handle the spice of jalapeno poppers?
Not to worry.
The key is that when you prep and cut the jalapenos, scrap and remove as much of the interior membranes and seeds.
They hold the heat man.
The cream cheese and cheddar filling also work at reducing this appetizer’s flame level.
And bacon. Everything is better wrapped in bacon right?
Toward the end of the cooking, I love to slather each popper with a brush of my favorite BBQ sauce.
It sends these poppers over the top of the yum scale.
On the messy scale too, but really who’s worrying about that on game day?

Grilled Jalapeno Poppers With Bacon
Ingredients
- 9 Fresh Jalapenos
- 4 oz Cream Cheese softened
- 1/4 cup Shredded Cheddar Cheese
- 9 slices Bacon cut in half
- BBQ Sauce
Instructions

Cut each jalapeno in half lengthwise and then spoon out the seeds and membranes. Note: If you are doing a lot of poppers, invest into rubber gloves (you will thank me!). And whatever you do, DO NOT touch your face or eyes with your hands after they have been cutting and seeding jalapenos. Don't ask how I know.

In a small bowl, combine the cream cheese and cheddar cheese.

Stuff each jalapeno half with the cream cheese mixture. Wrap with a bacon slice and secure with a toothpick.

Grill on low heat or bake in the oven at 275 degrees F for 45 minutes to 1 hour, or until the bacon is cooked and cheese has melted.

In the last 15-20 minutes of cooking time, brush the poppers with your favorite bbq sauce.

Delicious served warm or at room temperature.
