Homemade Lasagna Soup Recipe
The past couple of years, for the month of January, I would post recipes that were considered “Double Dinners”. Double Dinners is a concept where the recipe makes enough food for two meals. One you eat right away, the other you freeze for a later time. Soups are a wonderful Double Dinner meal and because of that, and it being darn right cold this time of year, I thought this January, I would focus on posting some of my favorite soups, including this Homemade Lasagna Soup Recipe.

While I’ve made The Pioneer Woman’s Lasagna Soup, and enjoyed it, the recipe had far too many ingredients and steps for me to make it quickly for a regular weeknight meal.

This soup, on the other hand, has all the flavor you would find in your favorite lasagna, but without all the hassle.

Another positive is it uses the ingredients most people have readily available in their fridge and pantry.

Just brown some ground beef with chopped onion and a little bit of garlic.
Add in some broth, diced tomatoes, tomato sauce, and seasonings.
Simmer away. Then add in broken lasagna noodles (or any other small pasta shape you like) cook until tender.

Top with Parmesan and/or mozzarella cheese.
Dinner is served!


Homemade Lasagna Soup Recipe
The Best Homemade Lasagna Soup Recipe is a super easy recipe for a simple weeknight meal using ground beef.
Ingredients
- 1 lb Ground Beef
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 box (32 oz) Chicken Broth
- 2 cans (14.5 oz) Petite Diced Tomatoes
- 1 can (15 oz) Tomato Sauce
- 1/2 Tbsp Brown Sugar optional (takes acidity out of all the tomatoes)
- 2 tsp Italian Seasoning
- 1/2 tsp Salt
- 1/2 tsp Thyme Leaves
- 2 cups Broken Lasagna Noodles Approx 8 oz
- Parmesan and Mozzarella Cheese, for topping
Instructions

In a large pot, combine ground beef, chopped onion, and garlic. Cook over medium-high heat until beef is browned. Drain.

Stir in broth, petite diced tomatoes, tomato sauce, brown sugar, Italian seasoning, salt, and thyme leaves.

Bring to a boil, reduce heat and simmer 20 minutes.

Add noodles and simmer until pasta is cooked.

Pour into bowls and top with Parmesan and/or shredded mozzarella cheese.
Recipe Notes
*Can use any small pasta shape in place of broken lasagna noodles
