Homemade Salted Nut Rolls

This coming Sunday, is the annual “Cookie Walk Fundraiser” at our church. It is an event where each parish member brings in a few dozen of their favorite cookies or candies which are set out on decorative trays along a line of tables. After paying for a to-go container (the fundraiser part), individuals can walk through the selection of cookies, filling their vessel with all of the seasonal treats their hearts desire. As I have been trying to narrow down my list of goodies to take, this recipe for Homemade Salted Nut Rolls has wiggled its way to the top!

Everyone has there go to gas station candy bar right? The one where if you have to stop to get gas, take a bathroom break, and/or grab a pop or water for the road, you also have to grab something to snack on. I myself would probably go for a Twix, maybe others a bag of M&M’s. But the one my dad would usually turn to when I was growing up, was a salted nut roll.

It is that perfect salty sweet combination.

A soft marshmallow center covered in melted caramel and rolled in chopped peanuts.

Simple, but effective.

Now it may sound simple, with just a few ingredients that make up this delicious treat. But as my experience tells me, find a friend when putting these together.

The key to covering the marshmallow logs in caramel, is making sure they stay cold and in a frozen state. Work in small batches, removing just a few at a time from the freezer. Have one person in charge of dipping the logs in the melted caramel. And another person in charge of rolling in the chopped peanuts.

Ask me how I know? I have a nice burn on my finger tips, from trying to superwoman this one by myself.

Melted caramel is Hot caramel.

Homemade Salted Nut Rolls

Ingredients

  • 1 jar (7 oz) Marshmallow Creme
  • 2 – 2 1/2 cups Powdered Sugar
  • 1 pkg (14 oz) Caramels
  • 2 Tbsp Water
  • 2 cups Salted Peanuts, chopped

Instructions

  1. In a large bowl, beat marshmallow creme and 1 cup of powdered sugar until blended. Knead in enough of the remaining powdered sugar, until the dough comes together and is easy to handle.

  2. Divide mixture into 4 equal portions. Roll each portion into a 1/2 inch thick log. Then cut the log crosswise into 1 1/2 inch pieces. Place each piece on a parchment lined baking sheet. Repeat this step with remaining. portions. Then freeze logs for about 15 minutes or until firm.

  3. While the logs are freezing, heat caramels and water over low heat until melted, stirring often.

  4. Working with about 1/4 of the pieces at a time, dip the logs into the caramel and then roll into the chopped peanuts. Repeat with the remaining logs from the freezer.

  5. Return salted nut rolls to the fridge or freezer until set. Then store between layers of waxed paper in an airtight container at room temperature.

I’ve heard of “Hot Yoga” for exercise, but I I’ve heard of “Hot Yoga” for exercise, but I call this “Frigid Snow-ga”! Spent all afternoon scooping drifted snow out of feed bunks in freezing temps and gusts up to 40mph. It’s done now and cows are fed corn and hay to keep them warm through the night.

To kick things off is this recipe for Oven Baked BBQ Meatballs. “Double Dinners” is a concept of making one big dish. Freezing half of the meal to be used at a later (more hectic) time and baking the other for dinner tonight.

So it is no secret that I do love watching Hallmar So it is no secret that I do love watching Hallmark Christmas movies. This year I found out that @hallmarkchannel hosts a Christmas fantasy game, similar to the NFL’s fantasy football, you draft different Hallmark movies each week based on which ones you think will get the most viewers. It was a fun way to pass the two months 😱 of Christmas 24/7. Pretty excited to say that my team (of just mom and I) ended up ranked #20. Excited to see what we can do next year! 🎄💪🏼
