Smoked Gouda Pea Salad With Bacon
Based on the Dr Pepper Baked Beans recipe I posted earlier in the week, it would seem as though I am on a summer grilling kick for blog posts. I hope you don’t mind. In my family, we usually reserve Sunday dinner for grilling a great steak or juicy burger. Weekends are always busy though, so finding quick and simple side dishes with minimal ingredients are what I strive for. That is where this delicious (and ridiculously easy) Smoked Gouda Pea Salad With Bacon comes in.
I do understand that not everyone keeps their refrigerator stocked with Smoked Gouda.

Diced or cubed, Smoked Gouda holds up well in a variety of salads, while lending a slightly smokey flavor to your dish.
This pea salad is so simple.
Combine the ingredients.
Refrigerate overnight. (If you can wait that long.)
Serve!
One of the best things about a pea salad is it is so customizable.
Don’t like eggs? Leave them out.
Only have a 16 ounce package of peas in the freezer? Don’t worry. Use them.
Add in diced onion.
Or shredded cheese in place of the Gouda.
There really is no wrong way to do a pea salad.
Except maybe not making enough. It’s that good!

Smoked Gouda Pea Salad With Bacon
Ingredients
- 1 pkg (12 oz) Frozen Green Peas, thawed
- 4 oz Smoked Gouda, chopped
- 4 slices Bacon, cooked and crumbled
- 2 Hard Boiled Eggs, chopped
- 1/2 cup Mayonnaise
- 1 tsp Yellow Mustard
- Salt and Pepper, to taste
Instructions

In a bowl, stir together peas, smoked Gouda, cooked bacon, eggs, mayonnaise, and yellow mustard. Salt and pepper to taste.

Cover and refrigerate overnight. (If you can wait that long... sometimes I can't).
This is SOOOOOOO good! I made a double batch last week, ate it in two days. And just made another double batch! Best pea salad I have ever had!
