Soft and Fluffy Oatmeal Dinner Rolls
The first time I ever made these perfect Soft and Fluffy Oatmeal Dinner Rolls was for my food and nutrition project at our county fair back in 2004. It was the first bread recipe that I had ever tried my hand at and the 4-H judge considered these rolls for the Iowa State Fair. My rolls didn’t end up moving on to “the big show”, but they still earned a lavender ribbon and grew my love of baking, bread, and carbs in general.
This is my “go-to” dinner roll bread recipe. Perfect for taking to your Thanksgiving or Christmas family dinners. Slightly sweet, the oatmeal helps to keep the dinner rolls super moist and gives them a great texture.
These soft and fluffy oatmeal dinner rolls are actually on the large side, so if you have many mouths to feed or serving it with a huge family meal, try stretching the dough out to make 15 rolls instead of the 12 described in the recipe instructions. This is what I have done in the past few years in order to feed the whole Scheuring crew at Thanksgiving time.
But don’t think these rolls can only be made around the holidays, whip up this delicious recipe any time of year. Make them to go along your family’s favorite soup recipe or the bun to a great BBQ Pork sandwich!

Soft and Fluffy Oatmeal Dinner Rolls
Ingredients
- 2 pkgs yeast
- 1 tsp sugar
- 1/3 cup lukewarm water
- 2 cups boiling water
- 1/2 cup old-fashioned oatmeal
- 1/2 cup quick oatmeal
- 3 Tbsp butter, softened
- 2/3 cup brown sugar
- 1 Tbsp sugar
- 1 1/2 tsp salt
- 5 cups all-purpose flour
Instructions

In a small bowl, dissolve the yeast and 1 tsp sugar in the lukewarm water. Set aside.

In a large bowl, pour the boiling water over the two types of oats and softened butter. Stir the mixture and cool to lukewarm.

To the slightly cooled oatmeal mixture, add the brown sugar, 1 Tbsp sugar, salt, and yeast mixture.

Stir and knead in the flour, adding one cup at a time.

Return dough to a greased bowl, cover, and allow dough to rise in a warm place for one hour or until doubled in size.

Punch dough down. Form into 12 rolls and place in a greased 9X13 inch baking pan. Allow rolls to rise again, about 20-30 minutes.

Bake in a 350°F oven for 20-25 minutes, until golden brown.
