Sweet and Sour Pork Stir Fry
First off, I hope you all had a wonderful Easter weekend! Ours was wonderful even without being able to get together with extended family members plus enduring a nice ice and wind storm Sunday evening. That ice and wind storm caused an electric pole just down the road from us to blow over, catch fire, and knock out the neighborhood power for about 3 hours. An eventful Easter we won’t soon forget. Usually, in the week after Easter I make sure to share a recipe that uses up the leftover ham now chilling in your fridge, but today I’m switching it up. We are diving into one of my favorite take out- fake outs, Sweet and Sour Pork Stir Fry.

With the social distancing going on right now, something I am really missing out on is great Chinese food (not that you can’t get a meal to go, but that would defeat the purpose of me being a complete homebody).

If it wasn’t for the occasional grocery run every couple of weeks, homebody is a pretty great definition of the last month of my life.
Not that I am complaining, I was made for this sort of thing.

But when I am missing some of my favorite restaurant eats like Panera Broccoli Cheese Soup, Dairy Queen Ice Cream Cake, Chipotle Chicken, or Runza sandwiches I just make my own homemade version.

Just serve the pork over some steamed white rice and a side of roasted broccoli or stir fry vegetables.

Sweet and Sour Pork Stir Fry
Simple easy recipe for Sweet and Sour Pork Stir Fry is the perfect idea for Chinese at home. Crispy Pork with a delicious sauce is the best Takeout Fake out
Ingredients
Marinade
- 1 Egg, slightly beaten
- 2 Tbsp Flour
- 1 Tbsp Cornstarch
- 1/2 Tbsp Light Soy Sauce
- Salt and Pepper, to taste
Pork
- 1 1/4 lb Pork Chops or Pork Tenderloin
- 1 Tbsp Water
- 1/2 tsp Baking Soda
Sweet and Sour Sauce
- 5 Tbsp Ketchup
- 1/4 cup Water
- 1 1/2 Tbsp Brown Sugar
- 1 Tbsp Honey
- 1 Tbsp Rice Vinegar
- 1 tsp Oyster Sauce
- 1 tsp Sriracha
- Salt and Pepper, to taste
- 1/2 tsp Cornstarch
- 1 Tbsp Water
Instructions
Marinade

In a bowl. stir together the ingredients for the marinade: beaten egg, flour, cornstarch, soy sauce, and salt and pepper to taste.
Pork

Cut pork into thin strips. If necessary flatten with a meat mallet.

In a bowl, combine water and baking soda. Add in pork and let sit for 20 minutes.

After the pork has set for 20 minutes in the baking soda mixture, drain any excess liquid off the pork and then stir in the prepared marinade. Refrigerate marinating pork for at least 4 hours or overnight.

After marinating, deep fry pork slices in oil over medium to medium high heat, until golden brown and cooked. Drain onto paper towels and set aside.
Sweet and Sour Sauce

Meanwhile; in a saucepan combine the ketchup, 1/4 cup water, brown sugar, honey, rice vinegar, oyster sauce, sriracha, salt and pepper.

Bring sauce to a simmer. In a small bowl, combine 1/2 tsp of cornstarch with 1 Tbsp water. Then pour cornstarch mixture into simmering sauce. Taste and adjust seasoning to your liking.

Once sauce is slightly thickened, add the cooked pork chops and toss to coat.

Serve pork over steamed white rice.
