Tri Colored Pasta Salad
Since we are now past Memorial Day, I feel as though we can officially say summer is here. With summer comes more food centered around grilling and family picnics. When I think of those two things, my mind usually travels to pasta salad, especially one of my favorites, Tri Colored Pasta Salad.

My mom has made this pasta salad forever. It was actually her mom’s (my grandma’s) recipe.
Hence the somewhat “old school” and “retro” ingredient, a can of sweetened condensed milk. It adds such a creamy consistency and sweetness to the dressing.

The main star of the show is included in the name. The tri-color rotini pasta.
Everyone needs a little color in their pasta salad right?

Of course, there has to be a corresponding veggie to match each color of pasta.
Diced onion, green peppers, and carrots.

As with many salad recipes, this only gets better when prepared and refrigerated over night before serving.
Simply mix up the dressing, and chop up the assortment of vegetables as the pasta cooks.
Serve alongside a grilled burger or fall off the bone BBQ ribs.
Just remember to take along the recipe to share with family and friends. I will guarantee someone will ask you for it.


Tri Colored Pasta Salad
Ingredients
- 1 box (16 oz) Tri Colored Pasta
- 1 Onion, diced
- 1 Green Pepper, diced
- 3 Large Carrots, diced
- 1/4 cup Apple Cider Vinegar
- 1/2 cup White Sugar
- 1 can (14 oz) Sweetened Condensed Milk
- 2 cups Miracle Whip
- Salt and Pepper, to taste
Instructions

Bring water to boil in a large pot. Cook pasta until almost al dente. Drain and run under cold water to chill.

Meanwhile in a large bowl, combine the apple cider vinegar, sugar, sweetened condensed milk, and Miracle Whip.

Add the cooked pasta, carrots, green peppers, and diced onion to the dressing. Salt and pepper to taste. Stir to combine and chill for several hours or overnight.
Recipe Notes
~This recipe does best with Miracle Whip and not mayonnaise. Mayonnaise will start to fall apart and become watery as it sits with the salad.
~Also note that many popular tri-colored pasta comes in only a 12 oz box. The recipe needs 16 oz. If you are unable to find a large enough box of tri-colored pasta, you may use any kind of pasta for this salad.
