Turkey Thanksgiving Charcuterie Snack Boards
In my family, normally we have two Thanksgivings. One, that is an intimate, immediate family members only meal on Thanksgiving day. It includes all the “fixings”. The turkey, mashed potatoes, dressing, croissants, cranberry salad, and all the desserts. Then on the Saturday following Thanksgiving, the extended family of almost 50 people crowd into my aunt and uncle’s house for another feast. This meal is more potluck style. With each family in charge of bringing the various side dishes to the party. In most recent years, I’ve been in charge of bringing the dinner rolls (because hello carbs!), but I have been also known to bring the relish tray. This year, I wanted to up my game and in doing so came up with these super cute Turkey Thanksgiving Charcuterie Snack Boards.

Now by no means are these “classic” charcuterie boards, the super fancy ones that flood your Instagram feeds.
First off, most of the ingredients on those boards, CAN NOT be found in my parts of the country.
Secondly, we are not a fancy bunch in my family. We like good food. If you can make it cute and pretty, then that is a bonus!
Turkey Meat and Cheese Tray
Let’s start with the Turkey Meat and Cheese Tray.
For the turkey’s “body”, I just sliced thin rounds of my favorite summer sausage and then slices of salami for his “head”.

For the “tail feathers” I took small leaf-shaped cookie cutters and slices of my favorite types of cheeses. Cheddar, Colby Jack, and Pepperjack.
I fanned the cheese around the top two-thirds of a plate, assembled the body, and topped it off with some thin slices of green olives and cheese to add the details of his eyes, beak, and feet.

Turkey Relish Tray with Veggie Dip
I’ll be honest. When I had the thought of putting together this post. I became a little stumped on how to assemble a turkey shaped relish tray.
I tried and tried. Some things worked. A lot didn’t!
In the end, I’m just hoping that you see a turkey shaped relish tray below in my creation! Haha.

I filled the board with piles of carrot chips, sweet pickles, cherry tomatoes, black and green olives, cucumber slices, and my family’s favorite Candied Red Hot Cinnamon Pickles.
I made sure to serve it all with my Two-Ingredient Ranch Vegetable Dip.
You heard me right! Only two ingredients to make a quick and delicious dip for veggies.

Turkey Apple Platter with Fruit Dip
This one may be my favorite of all the Thanksgiving trays.
One reason is because I think it is ridiculously cute!

And secondly, because at the centerpiece is this Marshmallow Cream Cheese Fruit Dip.
Y’all!
I could eat it with a spoon it’s that good!
I just choose to dip apples in it to make it seem a little “healthier”.

Even though Thanksgiving may look a little different to many this year, I hope we can still find reasons to smile and be thankful.
If these cute turkey trays are the reason for you to smile and be thankful, even better!

Slice the cheeses into pieces that will easily fit onto a cracker. For mine, I actually used small leaf shaped cookie cutters. Layer the cheeses (alternating the pattern) around the top rim of your plate.

Slice the salami and create the "head" of the turkey.
-
Slice the summer sausage and create the "body" of the turkey.
-
Thinly slice a green olive to create the two eyes. Create a triangle shape from the pimento to form a "beak".
-
Thinly slice a piece of cheese to create the toes of the turkey, as well as, his "beard".

Place your favorite crackers on the board next to your turkey.

Use a couple celery stalks for the "neck" of the turkey.

Serve along side a bowl full of my Two-Ingredient Ranch Vegetable Dip.

Core and slice your apples. Soak them in the lemon-lime soda for about 5 minutes (this helps to prevent them from turning brown. Once they have soaked, remove from soda and rinse in cold water.

Fan the apples, varying the different kinds, around the bowl of dip.
