Cut each jalapeno in half lengthwise and then spoon out the seeds and membranes. Note: If you are doing a lot of poppers, invest into rubber gloves (you will thank me!). And whatever you do, DO NOT touch your face or eyes with your hands after they have been cutting and seeding jalapenos. Don't ask how I know.
In a small bowl, combine the cream cheese and cheddar cheese.
Stuff each jalapeno half with the cream cheese mixture. Wrap with a bacon slice and secure with a toothpick.
Grill on low heat or bake in the oven at 275 degrees F for 45 minutes to 1 hour, or until the bacon is cooked and cheese has melted.
In the last 15-20 minutes of cooking time, brush the poppers with your favorite bbq sauce.
Delicious served warm or at room temperature.
