  • 1/2 cup Butter, softened
  • 1/2 cup Plus 2 Tbsp Brown Sugar
  • 1/4 cup Plus 2 Tbsp Sugar
  • 1 Egg, slightly beaten
  • 1 tsp Vanilla
  • 1 cup Plus 2 Tbsp Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 tsp Baking Powder
  • 1 cup Old Fashioned Oats


  1. In a large mixing bowl, cream together butter and sugars.

  2. Add egg and vanilla. Mix to combine.

  3. Slowly stir in flour, baking soda, salt, and baking powder.

  4. Then gently stir in oats to mixture.

  5. Using a cookie scoop, place dough onto two parchment lined baking sheets.

  6. Bake at 350°F for 7-10 minutes or until edges are just a light golden brown. The centers should looked underbaked.

  7. Let cookies rest on the pan for 2-3 minutes before removing to a cooling rack.
