Ingredients

Chocolate Zucchini Cake

  • 2 cups Flour
  • 1/3 cup Baking Cocoa
  • 1 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 2 cups Shredded Zucchini
  • 1 1/2 cups Sugar
  • 3/4 cup Vegetable Oil
  • 2 tsp Vanilla

Chocolate Marshmallow Frosting

  • 1/4 cup Butter
  • 1/2 cup Sugar
  • 1/4 cup Milk
  • 1/2 cup Chocolate Chips
  • 1/2 cup Mini Marshmallows
  • 1 tsp Vanilla

Instructions

Chocolate Zucchini Cake

  1. In a large mixing bowl combine flour, cocoa, baking soda, and salt.

  2. In a separate bowl combine shredded zucchini, sugar, and vegetable oil. Add to dry ingredients, stirring by hand. Stir in vanilla.

  3. Pour batter into a greased 9x13 inch pan and bake at 350°F for 30-40 minutes or until a toothpick inserted into the center comes out clean.

  4. Cool pan on baking rack for 30 minutes.

Chocolate Marshmallow Frosting

  1. Melt butter in a small saucepan over medium-high heat. Add in sugar and milk. Bring to a boil, stirring often.

  2. Reduce heat to medium and continue to cook for 1 minute stirring often.

  3. Remove from heat; stir in chocolate chips and marshmallows until completely melted. Stir in vanilla.

  4. Let cool, stirring occasionally, until frosting thickens slightly.

  5. Pour over cake and spread until smooth.
