Canada's Nanaimo Bar Recipe

Ingredients

Bottom-Crumb Layer

  • 1 stick Butter
  • 5 Tbsp Unsweetened Cocoa Powder
  • 1/4 cup Sugar
  • 1 Egg, beaten
  • 1 3/4 cup Graham Cracker Crumbs
  • 3/4 cup Sweetened Shredded Coconut
  • 1/2 cup Walnuts, finely chopped (can also use almonds)

Middle- Buttercream Layer

  • 1 stick Butter, softened
  • 3 Tbsp Heavy Cream
  • 2 Tbsp Instant Vanilla Pudding Mix
  • 1 1/2 cups Powdered Sugar

Top- Chocolate Ganache Layer

  • 4 oz Semi-sweet Chocolate Chips
  • 2 Tbsp Butter

Instructions

  1. Line an 8-inch square baking dish with parchment paper.

Bottom-Crumb Layer

  1. Combine the butter, cocoa powder, and sugar in a heatproof bowl set over a saucepan of simmering water.

  2. Heat, stirring, until melted.

  3. Stir in egg and cook until the sauce starts to thicken. About 1-2 minutes.

  4. Remove the bowl from the pan and stir in the graham cracker crumbs, coconut, and chopped walnuts.

  5. Press into the bottom of the prepared pan.

Middle- Buttercream Layer

  1. Beat together the softened butter, heavy cream, and pudding mix with a mixer on medium-high speed until combined.

  2. Gradually beat in the powdered sugar, until light and fluffy.

  3. Spread buttercream over the bottom layer in the pan.

Top- Chocolate Ganache Layer

  1. Melt the chocolate chips and butter in a heatproof bowl over a pan of simmering water, stirring continuously.

  2. Let cool 2 minutes, then pour over the middle layer.

  3. Cover and refrigerate until set, about 1 hour.

  4. Cut into bars.
