Crockpot Beef Nacho Soup

  • 1 lb Ground Beef, cooked and drained
  • 1 cup Onion, diced
  • 1 cup Green Bell Pepper, diced
  • 1 Jalapeno, seeds removed and diced
  • 3 Garlic Cloves, minced
  • 1 box (32 oz) Low Sodium Beef Broth
  • 1 can (15.5 oz) White Beans, drained and rinsed
  • 1 can (15.25 oz) Whole Kernel Corn, drained
  • 1 can (10 oz) Rotel
  • 1 1/2 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/8 tsp Red Pepper Flakes
  • 2 cups Shredded Velveeta Cheese (can substitute cheddar cheese)
  • 1 cup Heavy Cream


  1. In the bowl of a slow cooker combine the beef, onion, green bell pepper, jalapeno pepper, garlic, beef broth, beans, corn, Rotel, chili powder, salt, pepper, and red pepper flakes.

  2. Cover and cook on HIGH for 4 hours or LOW for 8 hours.

  3. When time is up, stir in shredded cheese and cream. Cover and continue to cook for an additional 30 minutes or until cheese is melted and heated through.

  4. Serve warm topped with your favorite nacho "fixings" and tortilla chips.
