  • 8 oz Pasta, long noodle shapes usually work best
  • 1/4 cup Frozen Peas
  • 6-8 Bacon Slices, diced
  • 1/4 Onion, diced
  • 2 Whole Eggs
  • 1/2 cup Parmesan Cheese
  • 1/2 cup Heavy Cream
  • 1 Garlic Clove, minced
  • Salt and Pepper, to taste

  1. Cook pasta according to package directions.

  2. While the pasta is cooking, fry the bacon until just barely crisp. Remove from pan and drain on paper towels. Pour off all the bacon grease, but don't clean the pan. Return the pan to the stove over medium-low heat and cook the diced onion until golden brown. Set aside.

  3. In a bowl, mix together the eggs, Parmesan cheese, heavy cream, garlic, salt, and pepper until smooth.

  4. When the pasta is almost done, add in the frozen peas. Reserve a cup of pasta water, then drain the pasta and peas and place into a bowl.

  5. While the pasta is still very hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Splash in a little hot pasta water if needed to thin. Halfway through add in the bacon and onions, before finishing adding the sauce, stirring until it is all combined.

  6. Serve immediately with extra Parmesan cheese.
