Mini Cheddar Meatloaves
A friend recently made a joke that adulthood was just someone asking the question of what’s for dinner, every night, for the rest of our lives. I had to laugh. It’s true. Sometimes dinner is simply leftovers. Other times it’s our favorite breakfast foods with minimal effort. And sometimes it’s takeout. But, another option when looking for something quick and simple can be these Mini Cheddar Meatloaves.

And yes.
I did hear you groan and say… Meatloaf?
Who wants to eat meatloaf?

I get it. Meatloaf has gotten a bad rap over the years.
Usually it’s dry. Not very flavorful and reminds you of school lunches as a kid.
Plus, let’s not forget to mention it has the word ‘loaf‘ in it. Ha!

I’ve already shared my regular recipe for meatloaf (and it’s delicious- by the way).
But, this one brings its own merits to the table..
One being, (as the name suggests) we’ve added cheese! You can’t go wrong with cheese.
The second is (also as the name suggests- ha!) these are a fun mini patty shape.
Everyone, especially kids, like when things are “fun-sized”.

What makes this recipe even better is, it’s quick and simple.
Mix together in a bowl the egg, milk, cheese, oats, diced onion, and salt. Add in the ground beef and form into little patties or loaves.

Bake in the oven, topped with the sauce, and dinner is served in less than an hour!
Make it a meal with your family’s favorite veggie, side salad, or (my personal suggestion) a little macaroni cheese.
