Chopped Italian Sandwich
As much as I love fall, I’m not quite ready to say goodbye to summer. Or my favorite summer eats (BLTs and sweet corn anyone?). Summer is when I’m in the kitchen less and outside in my garden more. When I do cook, I want it to be quick and easy, with minimal effort. Enter this Chopped Italian Sandwich recipe.

In my opinion, there is nothing better for these last days of summer spent by a pool or body of water than these sandwiches.
The filling can be made in advance, and popped into the fridge until meal time. Just add the dressing, and serve up on hoagies, a lettuce salad, or even as the base of a delicious Italian pasta salad.

To make, start by mixing up the dressing recipe.
For ease, I used a mason jar and added the red wine vinegar, extra-virgin olive oil, garlic, honey, Dijon mustard, salt, pepper, dried oregano, and dried basil.
Screw a lid onto the jar and shake up the dressing ingredients until well combined. Set aside.

Next, it’s time to get chopping.
You can do this a couple different ways. Use a large cutting board and sharp knife to chop the rest of the ingredients into bite-sized pieces. Or, if you have a large food processor, use it to do a bulk of the work.
Start by chopping the vegetables. Banana pepper rings, lettuce (or use already shredded lettuce bought from the grocery store), tomatoes, and red onion.
Put all the chopped veg into a large mixing bowl and season with salt, pepper, and oregano.

Next, chop up the meats and cheese.
Salami, pepperoni, ham, and provolone.
Add to the mixing bowl with the veggies and stir together.

Next, add in the mayonnaise and dressing you prepared earlier.
Stir everything together and serve on sub rolls with a side of potato chips for a quick, and easy meal.

Ingredients
Italian Salad Dressing
- 1/4 cup Red Wine Vinegar
- 1/4 cup Extra-Virgin Olive Oil
- 1 garlic clove, finely diced or grated
- 1 Tbsp Honey
- 1 tsp Dijon Mustard
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Dried Oregano
- 1/4 tsp Dried Basil
Sandwich Filling
- 1 Small Head Iceberg Lettuce (or about 8 oz shredded lettuce)
- 1 cup Banana Pepper Rings about a 12.5 oz jar, drained
- 1 cup Cherry Tomatoes
- 1/4 cup Sliced Red Onion
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Dried Oregano
- 1/4 lb Salami, deli sliced
- 1/4 lb Pepperoni, deli sliced
- 1/4 lb Ham, deli sliced
- 1/2 lb Provolone cheese, deli sliced
- 1/2 cup Mayonnaise
- Sub, Hoagie, or Hawaiian Rolls, sliced
Instructions
-
In a small bowl, or mason jar, combine the salad dressing ingredients and mix together. Set aside.
-
On a large cutting board (or with the help of a large food processor), chop into bite-sized pieces the veggies- lettuce, banana pepper rings, tomatoes, and red onion. NOTE- If you are preparing the sandwich filling ahead of time, leave out the lettuce until right before serving and then stir into the mixture. This is easiest if you are using pre-shredded lettuce bought at the store.
-
Once the vegetables are chopped, put them into a large mixing bowl and season with salt, pepper, and dried oregano.
-
Next chop the meats and cheese- salami, pepperoni, ham, and provolone cheese. Add to the bowl with the other ingredients.
-
Top the sandwich mixture with mayonnaise and stir to combine. Start adding the salad dressing until the mixture reaches your desired consistency.
-
Serve on your favorite sub rolls and enjoy!
Recipe Notes
- This filling is great served on sub rolls, over lettuce for a nice main course salad, or with some pasta for a delicious side salad at your next BBQ. Mix up extra salad dressing as needed.
- As mentioned in the instructions, if making the sandwich filling ahead of time, it’s best to leave the lettuce out of the mixture until right before serving. Then add in shredded lettuce bought at the store, stir together with meat filling, and adjust dressing as needed.
