Tomato Tortellini Soup with Sausage
Brrrr… It seems as though the whole country is in a deep freeze this week. Whenever that happens, all I can think about is baking and having a pot of soup stewing away on the stove. Comfort food is clearly my food and this Tomato Tortellini Soup with Sausage is perfect for the cold and snowy season.

Start by browning the sausage with an onion in a large pot over medium heat.
For this soup, you can use Italian sausage, spicy sausage, or breakfast sausage.
Whichever flavor fits your fancy.

Add in the garlic, paprika, parsley, and flour.
Cook for a couple minutes and then slowly stir in the chicken broth and tomato sauce.

Bring to a simmer, stir in and cook your favorite cheese tortellini (fresh or frozen).
Just before serving, add in a splash of heavy cream and season with salt and pepper to taste.

When ready to serve, top each bowl with a sprinkling of Parmesan cheese and a side of crusty french bread.

It’s wonderful for busy weeknights when you don’t want to put in much effort or work into what you’re cooking. Maybe even more so when you’re having to clean up.
Am I right? Or am I right?
