Buffalo Chicken Totchos

Buffalo Chicken Totchos

Football food is my kryptonite. Chips and dips. Wings. Burgers. Chili. If I can eat it while watching my favorite teams play football on fall weekends, I know I’m going to love it. These Buffalo Chicken Totchos check all those boxes and more!

First off, let’s take a moment and discuss the term ‘totchos’.

It is a mashup of tater tots meet nachos.

Instead of layers with melted cheese and other toppings being piled onto tortilla chips, people have begun to use tater tots (or a similar spud variation) as the base.

Seasoning them with Tex-Mex flavors and then topping them with other scrumptious ingredients.

Now unlike nachos, I find that tatchos are best enjoyed with a fork instead of just your fingers.

I mean… unless you want buffalo sauce and cheesy goodness all over your hands and if that’s the case, go at it friends!

I won’t judge.

You can use regular tater tots, mini tots, or in my case, I chose the tater crowns.

Hey- it was what I had in the freezer.

Once you have your tots, its time to season them.

I used a mix of chili powder and cumin, but toss on some regular taco seasoning if that’s what ya fancy.

Or leave them plain and let the toppings shine.

While the tots cook and get nice and crispy, go ahead and make the buffalo chicken mixture.

All you need is some cooked chicken, diced celery, and buffalo sauce. Heat it all up together and then when your tots are ready, spoon the buffalo chicken over the top and cover with a thick layer of shredded Pepperjack cheese.

Broil until the cheese is melted and then serve hot to your favorite football crowd with a drizzle of blue cheese dressing over the top.

It’s a winner in my book!

Ingredients

  • 1 lb Frozen Tater Tots (or similar)
  • 1 tsp Chili Powder
  • 1/2 tsp Ground Cumin
  • 1 Tbsp Butter
  • 2 Celery Stalks, diced
  • 1 cup Cooked Chicken (rotisserie, diced, whatever you have on hand)
  • 1/2 cup Buffalo Sauce
  • 8 oz Shredded Pepper Jack Cheese
  • Blue Cheese Dressing/Dip for serving

Instructions

  1. Toss the tater tots with the chili powder and cumin to coat all sides. Spread out on a cookie sheet and bake at 450℉ for about 30 minutes or until the tots are golden and crispy.

  2. Meanwhile, in a skillet over medium heat, melt the butter and sauté the diced celery for a couple minutes. Add in the cooked chicken and buffalo sauce and heat through.

  3. When the tots are crispy, take them out of the oven. Set to broil.

  4. Pile the tots together and then sprinkle with half of the Pepper Jack cheese. Top with buffalo chicken mixture and then the rest of the cheese.

  5. Place the pan with the totchos in the oven under the broiler until the cheese is melted (don't take your eyes off it- you've been warned!).

  6. When everything is melted and bubbly, take the pan out of the oven, top with a drizzle of blue cheese dressing and serve!

IF IT MAKES YOU HAPPY by @julieoliviaauthor sure a IF IT MAKES YOU HAPPY by @julieoliviaauthor sure as heck made me happy last year when I first read it. The book is ridiculously adorable. The perfect nostalgic romance read for the fall to Christmas season!

With summer coming to an end, I recently started my re-read of IF IT MAKES YOU HAPPY. This book reminds you of every 90’s and early 2000 rom-com and the much beloved Gilmore Girls.

Things I loved- A story with ‘mature’ main characters. Adorable kids. Getting to experience a New England September, October, November, December, and New Years. Grand gesture ending. And my favorite? Rocket the Dog. Who knew I’d love an animal and his personality so much. He really was the perfect addition to the story, and I can’t imagine the book without him and his humor. I loved that the epilogue was written from his view.
