Cheesy Ham and Broccoli Soup
First, let me start by saying I hope y’all had a wonderful Christmas spent with family and friends. Second, I hope you have some leftover ham in the fridge because you will want to waste no time in making this delicious Cheesy Ham and Broccoli Soup to warm up on a long winter night.
What is it about the pairing of broccoli, ham, and yes…. Velveeta?
Ranks right up there with culinary combinations like peanut butter and jelly sandwiches and chili cheese hot dogs.
This is a great soup to make for a party and keep warm in a slow cooker. Or be a little selfish and keep it all to yourself. The leftovers are just as good as the day this soup is made.
Plus, I think we have established by now how much I love my carbs. Pair this cheesy goodness with my favorite white bread or serve inside a hollowed out bread bowl.

Cheesy Ham and Broccoli Soup
Ingredients
- 5 Tbsp Butter
- 1/2 cup Chopped Onion
- 1/4 cup Flour
- 2 cups Chicken Broth
- 2 cups Half and Half
- 8 oz Broccoli, chopped
- 8 oz Velveeta, cubed
- 1-2 cups Cubed Ham
Instructions

In a large saucepan, melt the butter over medium heat. Add onion and saute until tender and translucent.

Sprinkle the flour over the sauteed onions. Continually stir the flour and onions for 2-3 minutes or until the flour starts to brown. Do not burn!

Slowly whisk in the chicken broth and half and half. Bring to a gentle simmer. Add the broccoli. Cook for 10-15 minutes until broccoli is tender, stirring occasionally.

Reduce heat, add in Velveeta. Stir until cheese is melted. Add in ham. Heat through.

Great served inside a bread bowl.
