Christmas Shortbread Cookies
This weekend our church has their annual “Christmas Cookie/Candy Exchange”. Parish members bring their best Christmas goodies to share. It is one of our church’s fundraisers where individuals can purchase a container to fill with an assortment of cookies and candies. Plus Santa even shows up for the fun! These Christmas Shortbread Cookies are on my to do list this weekend for the exchange.
The first weekend in December is usually reserved in our house for baking goodies to keep on hand throughout the holiday season. Christmas cookies and candies are perfect to throw onto a platter for any last minute, drop-in, guests that may happen this time of year.
These Christmas Shortbread Cookies are simple, small, and the perfect accompaniment to a hot cup of coffee.
And since they are on the small side, I tell myself eating five of them is equal to a regular cookie. (Please tell me this is okay and there are others of you out there who share my ideology.)
Personally, I’m not the most creative cookie decorator. That’s why I love these Christmas Shortbread Cookies.
With either the addition of festive holiday sprinkles or candied cherries, the shortbreads turn into the perfect Christmas cookie to share with family, friends, and Santa!

Christmas Shortbread Cookies
Ingredients
- 3/4 cup Butter, softened
- 6 Tbsp Powdered Sugar
- 1 cup + 2 Tbsp Flour
- 2 Tbsp Cornstarch
- 1/4 tsp Vanilla Extract
- Sprinkles and/or Halved Candied Cherries
Instructions

In a bowl, cream softened butter with powdered sugar until combined and fluffy.

Gradually mix in flour, cornstarch, and vanilla. Mixture will need to be well blended.

Using a 1 inch cookie scoop, roll dough into balls, and place onto an ungreased baking sheet.

With the tines of a fork, press lightly onto the tops of the balls to flatten slightly.

Decorate cookies with sprinkles, or makes small indentations and add halved cherries.

Bake at 350°F for 20-22 minutes or until bottom of shortbreads are lightly browned.

Cool 5 minutes before removing from pans to wire racks.

I made these for the first time this Christmas. They turned out perfect. I rolled them in sugar and topped with a candies cherry. Truly the most festive cookie on the table and everyone loved them. Thank you so much for sharing the recipe, it has turned into a new family tradition.

Can I use this recipe in a cookie press?
Dena, unfortunately I have never tried this recipe in a cookie press. Mostly because I don’t own a cookie press. But I figure you can always try something once 😉
