Football season is back, leaves are starting to turn, and pumpkin products are everywhere. Fall is here y’all! It is my absolute favorite season. And fall for me is not complete without these Pumpkin Bars with Cream Cheese Frosting.
Now technically they are more of a pumpkin cake than bar, but man oh man. Whatever you call them it should just be delicious!

Pumpkin Bars with Cream Cheese Frosting
Ingredients
- 4 eggs
- 1 2/3 cup sugar
- 1 cup vegetable oil
- 1 (15 oz) can pumpkin
- 2 cups flour
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 8 oz cream cheese softened
- 1/2 cup butter softened
- 1 tsp vanilla extract
- 2 cups powdered sugar
Instructions

In a mixer on medium speed, combine the eggs, sugar, oil, and pumpkin.

In a separate bowl mix together the dry ingredients: flour, cinnamon, baking powder, baking soda, and salt.

Add the dry ingredients into the pumpkin mixture. Mix on low speed until combined.

Pour the batter into a greased 9x13 inch pan, smooth out the surface.

Bake at 350°F for 30-35 minutes. Let cool completely before frosting bars.

To Make Frosting: In a mixer over medium speed combine the cream cheese and butter until smooth. Mix in vanilla extract. On low speed add in the powdered sugar until completely combined. Spread onto cooled bars.
