Sausage and Pepper Subs
Hello New Year and hello football playoffs! Is your favorite NFL team still in the mix for a chance at the Super Bowl? No matter who you are routing for on the weekends, pairing a football game with these Sausage and Pepper Subs is an easy decision.

Start by browning either Italian Sausages or your favorite flavor of brats in a large skillet.
Once they are brown, lower the heat, and add in a strong splash of beer (or water).
Cover with a lid, and cook sausages until they reach an internal temp of at least 160F.

Next, remove sausages from pan. Keep them warm.
Into the same skillet you cooked the sausages, add sliced peppers and onion. Sauté until tender.

Once the veggies are ready, add in a little brown sugar, apple cider vinegar, Worcestershire sauce, and ground pepper.
Cook for about 5 more minutes until most of the liquid is absorbed and the veggies are coated in the sauce.

Cut the sausages or brats in half lengthwise and then in half crosswise.
Add the sausages back into the skillet, and stir to coat.

To serve, place a few of the sausage pieces on a toasted roll, and top with the peppers and onion mixture.
Add these sandwiches to the rest of your game day spread, and watch them quickly disappear.
