We are in the last few days of Lent, and as a Catholic, I’m always in need of seafood recipes for Friday meal ideas. This Baked Cajun Shrimp is ridiculously easy, and quick to make.

I love shrimp. It’s simple, , low calorie, usually affordable, and pairs well with a variety of sides like roasted vegetables, steamed rice, or noodles.

This recipe starts by making an easy marinade.
Mix together olive oil, lemon juice, minced parsley, garlic, brown sugar, soy sauce, and Cajun seasoning.

Add in about a pound of shrimp.
I like to use large or extra-large shrimp, but any size would work.
Refrigerate the shrimp in the marinade for at least an hour, I usually leave it overnight.

To cook, you can either thread the shrimp onto skewers and grill them.
Or place shrimp (and marinade) into a large baking dish. Bake the shrimp at 450F for 7-10 minutes, or until shrimp is opaque.

I love to serve this shrimp on a salad or with crusty bread, rice, noodles, or roasted broccoli for a delicious and easy weeknight meal.
A dinner idea to impress guests.
