Beef and Cheese Stuffed Manicotti
Let me start off by saying I hope all of you had a very Merry Christmas. Mine was filled with plenty of family, friends, laughter, games, presents, and, of course, food. Lots and lots of delicious food! One of which was this simple dinner of Beef and Cheese Stuffed Manicotti.

It is an easy throw together meal that I love to make ahead of time or double the recipe, making one for my family and a second pan to stick into the freezer for another time when life gets a little busy (or busier than normal).

I like love almost any baked pasta dish, but there is something extra delicious about a stuffed manicotti.
I’ve had manicotti stuffed with “fancy” cheeses, cheese and spinach, cheese and mushrooms, etc.
But no matter what, I seem to always make my way back to this tried and true, super simple take.

Now I feel I need to give a bit of a warning. I did not say that this recipe was my favorite because it was fancy.
If you have been around here any length of time, you have probably realized I am anything but fancy.
Two of the staple ingredients in this dish are jarred pasta sauce and cottage cheese.
Yep cottage cheese.

Please just trust me. I don’t think you will be disappointed.
Except when someone eats the last manicotti in the pan!


Beef and Cheese Stuffed Manicotti
Ingredients
- 1 lb Ground Beef, cooked
- 1 jar (24 oz) Spaghetti Sauce
- 1 1/2 cup Shredded Mozzarella Cheese divided
- 1 cup Cottage Cheese
- 1/3 cup Parmesan Cheese
- 1/4 cup Chopped Parsley
- 2 Eggs, beaten
- 2 Tbsp Finely Diced Onion
- 7 Manicotti Shells cooked al dente
Instructions

Combine cooked ground beef and your favorite jarred spaghetti sauce. Pour half of the sauce into the bottom of a greased 9×13 inch baking dish.

In a bowl combine: 3/4 cup mozzarella cheese, cottage cheese, Parmesan cheese, parsley, eggs, and onion.

Gently spoon filling into each manicotti shell and place on top of sauce in baking dish.

Pour remaining meat sauce over the top of the stuffed manicotti shells and top with remaining 3/4 cup of mozzarella cheese.

Bake at 350 degrees F for 35-45 minutes until cheese is melted and sauce is bubbling.
This looks easy enough. Can it be frozen. There is only the 2 of us
Yep. Similar to how you would for lasagna.
