Cheesy Bacon Breakfast Cups

I enjoy a big brunch spread as much as the next person. Pancakes, sausage, crispy hashbrowns, and eggs over easy. But honestly, who has time for all that on a weekend, let alone on a busy weekday before school and work? Still, eating a granola bar while heading out the front door with my morning coffee isn’t always the answer either. That’s why I love this recipe for Cheesy Bacon Breakfast Cups.

With a couple staple ingredients from your fridge and pantry these little breakfast bites come together in no time and can be enjoyed the day they are baked or saved for a busy morning later in the week.

Simply cook up a few slices of bacon, crumble them, and add it to a bowl.

Whisk together eggs, cottage cheese, cheddar cheese, and seasoning, adding it to the bacon.

Then pour the egg and bacon mixture into greased muffin tins and bake about fifteen minutes and breakfast is ready!

Yes- It’s that simple.

What also makes this recipe perfect, is how you can change the ingredients to fit your family’s preferences and taste.

Use cooked breakfast sausage or diced ham in place of the bacon.

Swap out the Cheddar cheese for Pepper Jack.

Add in a little diced onion and/or peppers. Maybe even jalapenos if you like a little spice in your life.

As mentioned earlier, these are great the day they are baked, but can also be made in advance and kept in the fridge for breakfast options all week long.

Simply pop one of the breakfast bites into the microwave and heat it up for a few seconds.

Maybe even pop the breakfast bite between a couple slices of toast as you head out the door.

Just don’t forget the cup of coffee too!

Cheesy Bacon Breakfast Cups

This simple and quick recipe for Cheesy Bacon Breakfast Cups is the perfect brunch idea. Bacon cheddar egg bites made in muffin tins.

Ingredients

  • 6 Eggs
  • 8 slices Bacon, cooked and crumbled
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Cottage Cheese
  • 1 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder

Instructions

  1. In a large bowl, whisk together eggs. Add in cooked bacon pieces, cheddar cheese, cottage cheese, pepper, garlic powder, and onion powder. Stir until just combined.

  2. Use a 1/4 cup measure and scoop the egg mixture into 12 greased muffin cups. They should be about 3/4 full.

  3. Bake at 350℉ for about 15 minutes or until the bites are creamy in the center and have risen.

  4. Let cool for 5 minutes before serving.

Living in the country, means a swing through Paner Living in the country, means a swing through Panera for one of my favorite lunches of a soup and sandwich combo, isn't always an option. Instead, I've learned to make do with what I can whip up from scratch at home. 

This Turkey and Roasted Pepper Panini gives me all the Panera flavor without having to leave the house (or get out of my sweatpants). Link in profile.
