Gold Medal Bars
The opening ceremonies for the Olympic winter games are just around the corner. I don’t know about you, but I love when they roll around every few years. I’ve never considered being in the Olympics, mostly because my athletic skills are zero to none. Probably because I’d prefer eating things like this, instead of a kale salad. But something about the competition, camaraderie, and the tears I get anytime the national anthem plays, makes me love watching the Olympics. These Gold Medal Bars are the perfect snack for any Olympic watch party.
My Gold Medal Bars are actually just a classic peanut butter Cheerio bar.
I’ve always thought the combo of Cheerio cereal with the sweet peanut butter mixture could pass as being a gold medal.
Add in some plain M&M’s.
(I even removed the orange ones from the bag, so that only the colors of the Olympic rings made there way into the bars.)
No worries. When I say “removed”, I really mean I ate them.
Why dirty another bowl in the sorting process?
Since it’s the Winter Olympics kicking off soon, I added the mini marshmallows to look like snow.
Ok…. I’m grasping at straws with that one.
But still, these bars are a great snack or dessert for any occasion not just the Olympics.

Gold Medal Bars
Ingredients
- 1 cup White Sugar
- 1 1/4 cup Corn Syrup
- 1 cup Creamy Peanut Butter
- 2 tsp Vanilla Extract
- 6-7 cups Cheerios
- 1/2 cup M&M's
- 1/2 cup Mini Marshmallows
Instructions

In a saucepan over medium heat, combine the sugar and corn syrup. Bring mixture to a boil.

Add peanut butter and vanilla. Stir to combine.

In a large bowl combine peanut butter mixture with Cheerios, M&M's, and marshmallows.

Spread mixture into a greased 9x13 inch pan. Let cool.
