Mesquite Grilled Chicken Marinade
It’s grilling season y’all. Although if you are anything like my family, we grill all year long. Rain, sleet, snow. My little Traeger Grill has seen it all. Usually I’m grilling up delicious burgers or steaks, but every once in a while I like to mix things up a bit. That is where this simple recipe for Mesquite Grilled Chicken Marinade comes in.

Maybe it is an unpopular opinion, but I fall into the camp of, chicken needs a little extra love.
It needs a little romancing.
It needs flavor man.

The flavor here, is just pure smoky goodness.
Thanks to the help of one ingredient.

Liquid smoke and a few simple pantry ingredients.
Olive oil, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, salt, and pepper.
Mix it all together, toss in the chicken, and let all the flavors meld together.

The marinade is perfect for either chicken breast or chicken thighs.
If given the choice, I would chose thighs every day of the week and twice on Sundays.
Dark meat just keeps things so delicious, tender, and juicy.

Mesquite Grilled Chicken Marinade
This simple and easy recipe for Mesquite Grilled Chicken Marinade is the perfect recipe for summer. Great for smoky-flavored chicken breasts or thighs.
Ingredients
- 1/4 cup Olive Oil
- 1/4 cup Apple Cider Vinegar
- 1/4 cup Brown Sugar
- 2 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Powder
- 1 tsp Mesquite-flavored Liquid Smoke
- 4 dashes Worcestershire Sauce
- 4 Chicken Breasts or Thighs
Instructions

In a small bowl, whisk together the olive oil, apple cider vinegar, brown sugar, salt, pepper, garlic powder, liquid smoke, and Worcestershire sauce.

Place chicken in a large Ziploc bag. Pour marinade over the top of chicken. Seal and marinade a minimum 2 hours or overnight.

Once done marinating, grill the chicken until cooked, flipping halfway through. (Be careful. Since there is quite a bit of sugar in the marinade, watch closely so the chicken does not burn.)

Do you need to use Worcestershire Sauce? Not partial to it. Don’t have any either. Nut Jar of liquid smoke is 15+ years old and doing fine.
