Small Batch Mashed Potatoes
I feel I should put a disclaimer at the start of this post for any family members who may be reading… No, this recipe will not be replacing our beloved Make Ahead Mashed Potatoes at family Thanksgiving. But, for those times when you don’t need to feed almost 20 people- this recipe for Small Batch Mashed Potatoes deserves a place in your recipe box.

Let’s be honest, sometimes you need to make enough potatoes for 50 people.
Sometimes you need to make enough for a few.
This recipe is perfect for the second situation. Whether that be for Thanksgiving, Christmas, or any regular weeknight meal in between.

Start by peeling a few potatoes. Yukon Golds, Russets, whatever floats your boat.
I actually like leaving about half of the peels on the potatoes. It adds a little something to the texture of this dish, but a completely optional step.

Dice the peeled potatoes, and add them to a large pot of salted water.
Boil until tender and drain.
Meanwhile, in a small saucepan, combine the butter and milk. Heat until the butter is melted and the liquid, warm.

Next, start mashing the potatoes and slowly adding the warm butter/milk mixture until a desired consistency is reached.
Season with some salt and pepper!

Serve with your Thanksgiving turkey, Christmas ham, or any other easy weeknight meal.

Small Batch Mashed Potatoes
This recipe for Small Batch Mashed Potatoes is easy, creamy, & the best side dish for Thanksgiving & Christmas. The perfect mashed potato recipe for two (or three).
Ingredients
- 1 3/4 lb Potatoes (I like to use Yukon Gold, but really any variety would work here)
- 1 stick Butter
- 1/4 cup Milk
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
Instructions
-
Scrub and peel the potatoes. (I like to leave a little skin on each potato for texture, but this is completely optional). Cut the potatoes in about 1 inch chunks.
-
Bring a pot of salted water to a rolling boil. Add the potatoes and simmer until they are very tender/soft. About 15-20 minutes. Drain completely and return potatoes to pot.
-
Meanwhile, in a small saucepan, heat the butter and milk over medium-low heat, just until the butter is melted and the milk is warm.
-
Mash the potatoes using a potato masher, adding the milk/butter mixture slowly as you go. ***Note– only add enough liquid to reach your desired consistency of mashed potato. Some people like a thicker texture. Some like it smoother.
-
Season with salt and pepper. I do about a 1/2 teaspoon of each.
-
Serve hot and smothered in gravy!
