S’mores Brownies
A quintessential part of almost everyone’s summer is making s’mores over an open campfire. But if you’re like me, sometimes you want all the parts you love about s’mores, without the mess. Or the heat- because good Lord- it’s been mighty HOT around here lately. So skip venturing outdoors, and make these S’mores Brownies in the comfort of your own home.

This recipe starts out with the convenience of your favorite box brownie mix.
For a few years now, I’ve been turning to Ghirardelli’s Triple Chocolate brownie mix. In my opinion, it can’t be beat!

Prepare the brownie mix as directed on the box and then pour about two-thirds of the batter into a 9×13 inch baking dish.
Drop in a few dollops of marshmallow creme and then swirl it into the batter to help distribute it throughout the pan.

Top with some broken pieces of graham crackers and then pour over the rest of the batter.
Bake the brownies until they are barely set, about thirty minutes.

Top the brownies with mini marshmallows and then return the pan to the oven.
Bake for an additional 10 minutes or until the marshmallows turn golden brown.

Remove the brownies from the oven and immediately top with a broken up Hersey bar (or chocolate chips) and more crushed pieces of graham crackers.
These bars are messy, sticky, and rich, but good golly- are they delicious too!

S’mores Brownies
This easy S'mores Brownies recipe is a simple summertime dessert made from your favorite boxed brownie mix, marshmallows, & graham crackers.
Ingredients
- 1 box (18 oz) Brownie Mix
- Vegetable Oil, as directed for brownie mix
- Eggs, as directed for brownie mix
- 2/3 cup Marshmallow Creme
- 6 Graham Crackers, broken into pieces, DIVIDED
- 1 bag (10 oz) Mini Marshmallows
- 1 Hershey's bar (or chocolate chips), optional
Instructions
-
In a large bowl, combine the brownie mix with vegetable oil, eggs, and water as directed on the brownie mix package.
-
Into a well-greased 9×13 inch baking pan, pour 2/3 of the browning batter, spreading it into an even layer.
-
Drop the marshmallow creme into the batter into dollops. Using a toothpick, spread the marshmallow creme around the pan to evenly distribute.
-
Sprinkle half of the graham crackers (about 3 crackers) over the batter and marshmallow creme.
-
Top with the remaining batter (it probably won't completely cover the graham crackers, but it will come close).
-
Bake at 325℉ until the brownies are barely set, about 30 minutes.
-
Top brownies with the mini marshmallows and spread to evenly distribute. Return to the oven.
-
Bake until the marshmallows are golden and soft, about 10 minutes. (Use the broiler on your oven if you'd like them a little darker.)
-
Immediately top the marshmallows with broken pieces of Hershey or chocolate chips and the remaining graham cracker pieces. Press slightly into the surface of the bars.
-
Let cool for a bit and then dig in! These are sticky, messy, and rich, but don't let that stop you from enjoying.
