Tater Tot Breakfast Casserole
Every good home cook needs a small arsenal of breakfast casserole recipes, like this one I shared last year for breakfast burritos. This simple Tater Tot Breakfast Casserole is sure to find a spot in your family recipe box.

They are the meat and potatoes of a Midwest diet!
Oh and cheese! We can’t forget the cheese.

This breakfast casserole starts out with a layer of mini tater tots across the bottom of the pan.
Next a layer of diced onions followed by your favorite breakfast meat.
I’ve made this with ham, sausage, or bacon.
A combination of all three is also approved! 😉

Pour on the egg mixture and top with cheese.
In a little over half an hour you have a delicious breakfast to feed your family.
Dig in!


Tater Tot Breakfast Casserole
Ingredients
- 4 1/2 cups Frozen Mini Tater Tots thawed
- 1/2 Onion finely chopped
- 1 lb Breakfast Sausage cooked
- 6 Eggs lightly beaten
- 1/2 cup Half and Half Cream
- 1/2 cup Sour Cream
- 1 Tbsp Dried Parsley Flakes
- 3/4 tsp Garlic Powder
- 1/2 tsp Pepper
- 1 1/2 cups Shredded Cheddar Cheese
Instructions

Layer thawed tater tots across the bottom of a greased 9×13 inch pan.

Cover tater tots with chopped onion and cooked breakfast sausage (or ham/bacon).

In a small bowl, combine eggs, half and half, sour cream, parsley flakes, garlic powder, and pepper. Gently stir in cheddar cheese.

Pour egg mixture over the top of tater tots and meat.

Bake uncovered at 350 degrees F, 35-40 minutes, or until golden brown and eggs set.
