Hash Browns Farmer’s Breakfast Casserole
Since fall is finally here, my thoughts start turning towards the holidays. More importantly, my thoughts turn towards the food that surrounds those holidays. Soup (and candy) for Halloween, turkey and all the fixings for Thanksgiving, and all the traditional fare that makes Christmas feel so special. One of those is this Hash Browns Farmer’s Breakfast Casserole that is perfect for Christmas morning.

Now stick with me.
I know that Christmas is still months away.
So why am I sharing this breakfast staple?

Because it is simple and delicious any time of the year.
Perfect for a Sunday brunch or a sleepy Saturday morning.

This casserole includes all the ingredients you could possibly want for breakfast:
Sausage and diced ham
Eggs
And, of course, butter and cheese!

Hash Browns Farmer’s Breakfast Casserole
This recipe for Hash Browns Farmer's Breakfast Casserole is perfect for Christmas morning. The best overnight bake that includes sausage, ham, and eggs.
Ingredients
- 1 pkg (30 oz) Frozen Shredded Hash Browns thawed
- 1/3 cup Butter, melted
- 1 tsp Beef Bouillon Granuales
- 1 lb Pork Sausage
- 1/3 cup Chopped Onion
- 1 cup Diced Ham
- 1 cup Cottage Cheese
- 3 Eggs, slightly beaten
- 4 slices American cheese, chopped
Instructions

In a large bowl, stir together thawed hash browns, butter, and beef seasoning.

Pour potatoes into a greased 9×13 inch pan. Press into the bottom.

Bake hash browns at 350°F for 25-30 minutes or until the edges are lightly browned.

While the hash browns bake, cook the sausage and chopped onions in a large skillet over medium heat. Drain.

In a large bowl, combine the sausage mixture, ham, cottage cheese, eggs, and American cheese.

Pour mixture onto baked crust.

Bake at 350°F for 40-45 minutes or until a knife inserted near the center comes out clean.

Let stand about 5 minutes to set.
