Smashed Potato Salad
Summer is here, and there are few things better than firing up a grill and having a cookout with family and friends. This Smashed Potato Salad recipe is the perfect addition.

Potato salad, of course, starts with potatoes.
Use whatever you have on hand. Russets or red potatoes are perfect.
For this recipe, I don’t peel the potatoes. Just scrub and cut into bite-sized pieces- about 1/2 inch pieces.

Boil the potatoes until fork tender then drain.
Since this is a “smashed” potato salad, mash the drained potatoes with a fork or hand-held potato masher.
I only mash until the potatoes are about 50% smooshed and 50% whole. This keeps the salad a little lumpy and a lot yummy.

Add in some finely minced onion, diced hard-boiled eggs, and minced garlic.
Mix up the dressing: mayonnaise, Dijon (or regular) mustard, lemon juice, and brown sugar.
Season with salt, black pepper, hot sauce, and Worcestershire sauce.

Pour the dressing over the potatoes and eggs, stir to combine.
Adjust seasonings as needed until it reaches exactly what you are looking for.

Keep the potato salad chilled until ready to serve with burgers and other summertime favorites.
