Instant Pot BBQ Pulled Pork
One of the first recipes I posted on this blog was my Dr. Pepper BBQ Pork made in a slow cooker. While I still love using a Crock-Pot, my Instant Pot is quickly becoming a go-to kitchen tool. It changes a meal that would normally take 8 hours to make into maybe an hour. That is why this Instant Pot BBQ Pulled Pork is a winner in my book.

Since I received my Instant Pot a couple years ago for Christmas, I’ve spent time experimenting on new recipes or changing some of my favorite slow cooker meals to IP.
My first experiment was Instant Pot Beef Tips with Gravy. Delicious.
I also have made Instant Pot Baked Beans. So simple.
Probably my favorite, Instant Pot Beef and Barley Soup. Da Bomb!

But there is something special about this sandwich.

The meat is coated in a super easy dry rub that sits on the meat overnight.
Smoky, sweet, and super flavorful seasonings meld into the roast as it chills in fridge.

The next day, the pork is seared in the Instant Pot, before being cooked on Manual mode for less than an hour.
When the pressure releases you will have super tender meat that is ready to be shredded and then doused in your favorite BBQ sauce.

Serve with coleslaw, baked beans (this recipe was included in Parade Magazine’s 25 All-Time Greatest Baked Bean Recipes), and your favorite potato chips.
The perfect summer meal is served!


Instant Pot BBQ Pulled Pork
This easy recipe for Instant Pot BBQ Pulled Pork uses pork shoulder or pork butt roast to make the best slow cooker pork sandwich
Ingredients
- 1 1/2 Tbsp Brown Sugar
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Ground Mustard
- 1/2 tsp Onion Powder
- 1/2 tsp Paprika
- 1/4 tsp Cayenne Pepper
- 1/4 tsp Garlic Powder
- 2 lb Boneless Pork Butt Roast
- 1 Tbsp Olive Oil
- 3/4 cup Chicken Broth
- 1/2 Tbsp Worcestershire Sauce
- 1/2 tsp Liquid Smoke
- 1/2 cup BBQ Sauce
Instructions

In a small bowl combine; brown sugar, salt, pepper, ground mustard, onion powder, paprika, cayenne pepper, and garlic powder.

Cut pork roast into 3-4 even chunks.

Coat pork with dry rub and then put into a resealable container or bag. Refrigerate for a couple hours or overnight.

When ready to cook, turn on the Instant Pot saute function. Heat olive oil in Instant Pot bowl and then sear pork, turning until all sides are browned.

Remove pork to a plate, pour in chicken broth and using a spoon scrape the bottom of the bowl to release any stuck on bits of food. Cancel Saute function.

Stir in Worcestershire sauce and liquid smoke. Then add in seared pork.

Secure Instant Pot lid and turn the valve to sealing. Turn on Manual mode and cook for 30 minutes.

Once cooked, let pressure release naturally for 15-20 minutes.

Remove pork from Instant Pot and shred with 2 forks. Stir in your favorite BBQ sauce and/or use the cooking juices.

Serve on buns.
